Turkey, Onion, & Veggie Cream Cheese Bagel Sandwich

I have been obsessed with bagels since as long as I can remember.  When I was younger, every Sunday we would pick up a dozen bagels for breakfast, then freeze the remaining and my mom would make me bagel sandwiches for the rest of the week for my school lunch.  Unfortunately, as I grew older I learned my beloved bagel isn't so healthy for the body.  Boo!  However, I have found the glory that is the Bagel Thin!  It's just like a regular bagel, except the doughy inside is removed.  I hate making sandwiches on regular bread (unless it's a panini), so alas...the bagel thin sandwich.

I'm a working girl..and working girls need a good lunch.  In this economy, bringing your lunch to work has become most ideal rather then shelling out a heavy amount of clams to go out for lunch(especially if you live in LA).  This is my absolute favorite sandwich to bring to work with me to cure my lunchtime hunger pangs. 

Serves: 1
Ingredients:
- 1 bagel thin (Thomas Bagels, or Einstein Bagels)
- 4 slices oven roasted turkey
- Green leaf lettuce
- Red onion (as much as you choose, I can eat red onion like an apple so I prefer a lot!)
- Low fat veggie cream cheese


Toast the bagel thin if you prefer a crispy crust like me, then generously spread the cream cheese on both sides of the bagel.  Add as much turkey, onion, and lettuce you'd like..and voila!  A light and delicious lunch that you can make quickly and take with you for your work-week lunch.
