Egg McBagel Sandwich

Breakfast is my favorite meal of the day, in fact, I could eat it every meal of the day if I could.  McDonald's offers a sinfully delish McMuffin breakfast sandwich which is a complete guilty pleasure of mine and I try to avoid at all costs.  So, I created a simple variation one morning for Scott and I and have added to my breakfast list of favorites.

Serves: 2
- 2 bagels
- 2 eggs
- 2-4 slices of bacon
- cheese (any kind, I used a shredded mix of cheddar and gouda that I had leftover in my fridge)
- salt & pepper to taste


Heat a skillet over medium heat and cook bacon until crispy.  Crack the eggs open into the same skillet used to cook bacon (bacon fat...mmmmmm).  Cook the eggs until the are medium.  Meanwhile, toast the bagels to give them a nice crunch.  Pile the egg, cheese, and bacon onto the bagel and enjoy!
