Classic Guacamole


Let me start by saying that Scott has claimed that this is the best guacamole he has ever had!  Yay!  I used to always buy premade guacamole, until I read the label!  Half the ingredients are processed and very unhealthy...sometimes it's not even made with avocados!  Guacamole can be very healthy, but you have to make from scratch in order to achieve all of it's benefits...and it my opinion, guac tastes SO much better when made yourself.

Serves: 2-3
Ingredients:
  • 3 ripe hass avocados
  • 1 tomato, seeded & diced
  • 1/2 red onion, diced
  • juice of half a lime
  • serrano chili pepper, diced
  • 1 garlic, finely grated (I used my zester to achieve this)
  • pinch of cayenne
  • pinch of onion powder
  • salt & pepper to taste

Add all ingredients together, and lightly beat with a fork until lumpy to your desire.

Bacon Wrapped Jalapeno Poppers

Need a kick?  Jalapenos stuffed with cream cheese and wrapped with bacon will indeed fulfill your need for a kick and is super simple appetizer option for company.  I first tried this amazing appetizer at my friend Laurie's house when her and her husband threw a get together a while back  I never thought of myself as one that enjoys eating jalapenos, but I devoured these little guys! 
Serves 4
Ingredients:
- 6 jalapenos
- 8 oz. light cream cheese, softened
- 6 slices bacon, cut in half

 

Preheat oven to 450 degrees.  Start by cutting off stems of the jalapenos, and then halving them.  Make sure to take out all those seeds, unless you really want to surprise your guests with a gnarly kick (could make for a nice practical joke).  Stuff the halves of jalapenos with the softened cream cheese and wrap with a piece of the halved bacon strips.  Secure with a toothpick or else the bacon will unravel in the oven.  Place the jalapenos poppers on a oven sheet and let it cook in the oven for about 15 - 18 minutes until bacon is completed cooked through.
